CAT6 handles 1 Gbps reliably and is fine for most workstations. CAT6A supports 10 Gbps and higher-power PoE for modern Wi-Fi access points and cameras, and is the better choice for new construction. We often recommend CAT6A for backbone and access-point runs and CAT6 for desks.
Fiber is used between buildings, between closets on different floors, for runs over 100 meters, and where electrical interference or future bandwidth needs justify it.
